You just wash them real good in a
sink full of salted water and pull them off of
the stalk. Let them drain in a big colander
while you fry up some bacon and onions
in a big pot. Then add the greens a little at
a time and keep turning them until they
are all wilted, then add a little water. Salt &
pepper and let them simmer until tender.
Add a teaspoon of sugar if necessary and
pepper sauce if you like. Note: A big mess
of greens will only feed 4 people. I put my
peeled and sliced turnips in a pot and boil
until tender. Then season them with salt,
pepper and butter just like potatoes.
