2lbs peeled shrimp 2c. diced Okra 1 Bell Pepper
2Tbs Veg. Oil 1 stick Margarine 2 Sticks Celery
2 Cloves Garlic 1 Tbs. Worcestershire 1 Onion
1Tbs. Chopped Scallions Tony’s Creole Seasoning to taste
Fry Okra in 2 Tablespoons of oil for 10 min, stirring constantly, so as not to burn. Use and aluminum Dutch oven, do not use black iron pot. Remove Okra and set aside. Add Margarine and flour and make a roux in the same pot. Chop all vegetables, add them and the okra and cook for 5 min. until wilted.
Add 3 Quarts of water and worcestershire sauce and cook 1 to 2 hours. Then add the shrimp and cook 30 min. or until tender, seasoning to taste with Tony Creole Seasoning. Serve with rice and for added flavor may sprinkle with File
